Why do you need Cheese Cloth when there are paper towels ?

When I first started making Ghee/clarified butter, I would buy the cheese cloth like all cookbooks say to use.  One day, I did not realize I ran out of cheese cloth and I HAD to make more ghee.  I decided that a paper towel needed to work for me.  And it worked like a charm!  
  • Heat up your butter as usual on the stove top... I let mine warm on low/medium (I have had issues with burning my ghee in the past).  
  • Watch all the "white foam" come to the top.  Let it simmer for about 10-15 minutes.  This also depends on if you are cooking on gas or electric.  I found it took longer on electric.  
  • Get your heat resistant bowl, and a paper towl- large enough to cover the bowl.  Also, make sure that the paper towel is hitting the bottom of the bowl.  You will have issues with spillage if its not at the very bottom.  
  • Pour your ghee into the bowl and let it seep into the bowl- watching all the "white foam" stay on papertowl
  • After this is done you are ready to go!  
The butter I used on this batch was from Kerry Gold (one bar- 8 oz)  from Costco.  I have used the Costco Kirkland Signature Unsalted Butter as well (much cheaper).  I also use Costco Kirkland Signature paper towels.
NOTE- The yield is about 75% when you make ghee/clarified butter.

UPDATE- I did a yield test last week.  The yield was 64%.
