Paleo Mint Pesto

I am a big lover of eating lamb.  I realize this is not everyones favorite but I really can't get enough of it.  I made a mint pesto to accompany our lamb roast and it was a fantastic addition.  

Here is what you need: 

2 cups fresh mint 
1/4 cup parsley
1/3 cup olive oil (also can try avocado oil) 
​1/4 cup walnuts 
5 cloves garlic 
dashes of salt 

Combine all ingredients in a blender.  You will probably need to blend for about 10 minutes to really get the ingredients together. You really don't want to have big flakes of mint.  

Disclaimer- I am a huge garlic fan (my poor husband)- I usually add more garlic then I listed.
