I am a big lover of eating lamb. I realize this is not everyones favorite but I really can't get enough of it. I made a mint pesto to accompany our lamb roast and it was a fantastic addition.
Here is what you need:
2 cups fresh mint
1/4 cup parsley
1/3 cup olive oil (also can try avocado oil)
1/4 cup walnuts
5 cloves garlic
dashes of salt
Combine all ingredients in a blender. You will probably need to blend for about 10 minutes to really get the ingredients together. You really don't want to have big flakes of mint.
Disclaimer- I am a huge garlic fan (my poor husband)- I usually add more garlic then I listed.

Okay- I really don't know what to call my "spicy cilantro sauce." I could say, its really freakin' good and you will want more of it. Something like that maybe.
Anyway, this is perfect to go on beef, chicken, seafood, eggs (yes- eggs), and veggies. I have used it as a marinade for beef, chicken, and pork. I have also used it as a dipping sauce.
It entails the following:
Cilantro- 3 Cups
Olive Oil- 4 TBS
Jalapeno seeded-keep some seeds in-the more you leave in the spicier it is
Avocado Oil- 2 TBS
Lime Juice from a large lime
Orange juice- use half a orange
Half a sweet onion
Garlic- 8 cloves
Use a blender to blend it all up. Finished!
When I first started making Ghee/clarified butter, I would buy the cheese cloth like all cookbooks say to use. One day, I did not realize I ran out of cheese cloth and I HAD to make more ghee. I decided that a paper towel needed to work for me. And it worked like a charm!
NOTE- The yield is about 75% when you make ghee/clarified butter.
UPDATE- I did a yield test last week. The yield was 64%.
