Persimmon, Avocado, Watercress Salad with Ginger

Do you want something light and refreshing?  Try this filling yet super healthy salad.  Better yet, easy to put together. 

Serving- 1

Here is what you need: 

Half Avocado
1 Persimmon 
Handful of Watercress 
Olive Oil 
Salt 
Pepper 
Ground Ginger 
Handful of Walnuts

Slice your avocado in small slices.  Take off the skin on your persimmon and slice thin like the avocado.  Place a persimmon slice on your plate, then avocado.  Drizzle with a very small amount of olive oil, sprinkle salt, pepper, and ground ginger.  Repeat steps until out of all your slices.  Top with Watercress and add walnuts around.
