Paleo Cream of Mushroom Soup

Good ol' fashion Mushroom Soup- Just so much more healthier and cleaner.  Think that says it all!

Here is what you need (perfect amount for two people)  
​14 oz of sliced mushrooms
4 TBS of Ghee
2 cloves of garlic- minced
1 Chopped Onion
1 Can of coconut milk
1 Cup of Bone Broth (you can use chicken broth if you need to)
1 Tsp salt  
2 Tsp fresh thyme (dried works too) 
1 Tsp All Spice 
3 Tbs Tapioca Flour/Starch

Start out by sautéing the garlic and sliced mushrooms with 3 Tbs of ghee on medium heat in a non stickpan.  Make sure the mushrooms are nice and soft and brown.   Takes about 10 minutes.

In a pot put the remainder of the Ghee on medium heat.  Add the chopped onion, coconut milk, and bone broth.   Let this simmer for about 5 minutes.  Add the mushrooms and garlic.  Add the salt, thyme, and all spice.  Cover on medium heat and cook for 10 minutes. 

Take your immersion blender and blend all ingredients.  Add in 1 Tbs at a time of the Tapioca Flour.  Make sure all the "chunks" are out of the soup.   The Tapioca Flour thickens the soup.  If you feel like it needs to be thicker then go ahead and another Tbs (do not add more than 1 at a time).  

Salt and Pepper to taste and serve.
