Paleo Bibimbap with steak

I discovered Bibimbop not too long ago at the restaurant Departure in Portland.  I want it every time I see it on a menu now.  I had to buy these concrete bowls just to do it right.  

What you need: 
(serves 2)
Grass fed Western Beef Fillet (or your favorite cut)- 1 Pound 
2 small Carrots- cut with julian peeler 
1 zoodled Zucchini 
Spinach - 2 cups
Cut up Scallions - 1/4 cup
Mushrooms (use your favorite- I used shiitake) - 1 cup
2 eggs 
 Minced  Garlic - 5 Tbs
Coconut Aminos - 3 Tbs
Sesame oil-  2 Tbs plus another 2 tsp 
Cauliflower Rice (1 head of cauliflower works great)  - 2 cups
Paleo Gachujang (recipe below)
salt and pepper 

Other ideas for veggies: 
cucumbers 
bean sprouts 

Paleo Gachujang
Fresno Chilies- 10 oz
5 cloves of garlic
Rice Vinegar - 3 Tbs 
Coconut Aminos- 2 Tbs 
salt 

De-stem and take out seeds from the Chilies.  I keep a few to keep the spice.  If you do not like spicy food then do not place any seeds in the blender.  Keep some if you like it nice and hot.  Place ingredients in the blender.  Blend for at least 3 minutes.  After blended, place in a pot on medium heat. Cook for 10 minutes continuing to stir until the mix is thick.  Place in a bowl and put in the refrigerator. 

Bibimbap
Put the Grass fed Western Beef Fillet in a zip lock bag- add in 2 Tbs Coconut Aminos, 2 Tbs of Garlic, and 1 Tbs of Sesame Oil.   Let this marinade for 2-3 hours.  

Grill Steak to Medium Rare on the Grill.  Cut into slices and place aside. 

Make your cauliflower rice by chopping in your blender add in 1 Tbs of garlic, salt and pepper.  I use the pulse button so it does not get too fine.  Place aside.  

Heat a pan or wok on medium and add in 1 Tbs Sesame Oil, 1 Tbs Coconut Aminos, 1/2 Tbs of Garlic.  Stir-fry the carrots, place aside.  Next Stir-fry the mushrooms, place aside.  Stir-fry the zucchini zoodles, place aside.  Add in the last of the garlic, salt pepper and stir fry the spinach.  

Make sure you put at least 1 tsp of sesame oil in the concrete bowls.  Preheat bowls on medium heat. Place cauliflower in bowls.  

Use a separate pan fry your eggs sunny side up.  

Place one egg on top of the cauliflower rice  in each bowl.  Add in your veggies all around the egg.  Leave cooking for 5 minutes and serve in the concrete bowl.  

If you do not have a concrete bowl- place cauliflower rice in the wok with with extra sesame oil and cook.  Preheat all the veggies in the microwave for 30-45 seconds. Place cauliflower rice in the bowl.  Add in the egg and veggies all around. 

Before you eat, mix all ingredients together.  Add in some Gachujang.
