This is quick and easy. Use any kind of white fish for this, but I used Tilapia for this one.
Here is what you need:
3 Tilapia portions
1 TBS Olive Oil
2 Garlic Cloves
1/2 Chopped Onion
3 TBS Tomato Paste
1/4-1/2 cup water
1 red sweet bell pepper (I cut these long)
1 yellow sweet bell pepper (I cut these long)
1 can black olives
1 Roma Tomato
1 TBS Italian Seasoning
Salt and Pepper
Dash of Crushed Red Pepper
Pre-heat oven to 375 degrees F.
Get a Oven Ready Pan and sauté onions, garlic, and with the olive oil for about 5 min on Medium heat. Add cut sweet bell peppers for another 3-5 minutes. Add tomato paste and stir in. Tomato paste will be quite thick so add in 1/4 cup water and cook down. Add in a little more water if you feel that the tomato paste is too thick and cook down. Add the black olives, Italian Seasoning and a little bit of salt and pepper. Chop up the Roma Tomato and place in the pan.
Take off of heat and add Tilapia portions in the pan. Take a brush and use to put the juices/seasoning/veggies on the portions. Sprinkle some Crusted Red Pepper- spice up how you like.
Put in the oven for 12-15 minutes.
Serve. I put this over cauliflower rice. A perfect paleo meal (Whole 30 Friendly)
