Kabocha Curry with Cauliflower Rice

The colder it gets the more I want hardy good feeling food.  I also still want something that is not fully fat and calorie driven.  I enjoyed this dish- satisfies the craving and doesn't make you feel big afterwards.  That's what we are all craving right?   You can make this vegetarian or with meat- I added chicken in mine. 
 
What you need: 
1 medium sized Kabocha Squash 
2 Chicken Breasts Chopped in Cubes 
1 Tbs melted Coconut Oil 
4 Cloves Minced Garlic
1/2 chopped onion 
1 chopped Red Sweet Pepper 
1 Tbs Curry Powder 
1 Tsp Paprika 
1/2 Juice of Lime  
1 head of Cauliflower or 1 bag of Cauliflower rice 
1 tsp onion powder 
1 tsp garlic powder
salt and pepper 
Cilantro to top 
 
Preheat oven to 400 degree F 
 
Cut the Squash into long slices and scoop out all the seeds.  Brush on a little coconut oil on each slice.  Sprinkle on a little curry, paprika, and salt (only sprinkle!).   Place on a pan with parchment paper and roast for 1 hour. 
 
When your squash has been in the oven for 45 minutes start melting the rest of the coconut oil in a medium pot on medium heat.  Add in Garlic, Onion, Curry powder, and paprika.  Saute until transparent and flagrant.  If you are going to add in a protein, add in now to sautee.  Nicely sear the outside until cooked.  The middle does not need to be cooked fully as you will add your squash shortly.   Add in the Red Sweet Pepper and saute for 5 min.   

Take out the squash and scoop up with a spoon.  Place in blender.  If you are not using a protein I would make this chunky- use the pulse button on the blender.  If you are using a protein- blend until smooth.  Add into pot.  

Cover for 20 min on Low/Medium.  If you are using gas put on low- if electric put on medium.  

While cooking, get your cauliflower rice ready.   Use a blender to make your cauliflower rice.  Cut into chunks and blend- I use the pulse button to ensure I do not get the cauliflower too fine.   

Put the cauliflower in pan on medium heat.  Add in the onion powder, garlic powder, salt and pepper.  Saute until just cooked through, about 5 -8  minutes.

Double check that your meat is cooked fully before serving.  When finished, Plate and add cilantro
